I can’t keep blueberries in my house for longer than a couple hours because Shawn gobbles them up on me in no time. I love that this kid loves fruit but he can devour a container of blueberries in seconds. So when I decided to make something with them, I need to act fast! Ha!
I made this easy Fresh Blueberry Jam a couple years ago when I took a week’s vacation from work. (Which is rare for me to take off an entire week but I needed a break to just stay home and do some things that I wanted to do.) I don’t really recall where I got the recipe from but it’s super duper easy to make and comes together in a snap. I made mine and froze it, so I would be able to eat it later on after blueberry season was over.
Ingredients:
2 cups Blueberries (fresh not frozen)
2 T. Honey
2 T. Lemon Juice
2 T. Chia Seeds
Instructions:
1. Add blueberries, honey and lemon juice into a pot and come up to a simmer over medium heat.
2. Mash down blueberries and stir in the chia seeds.
3. Continue simmering for 10-15 minutes and stirring often.
4. Remove from heat once it’s thickened and when cool, store in an air-tight container for up to one week. I put mine in freezer canning jars and ate it over course of 6 months.
Super easy and super delicious! With blueberry season coming, I should really make this again because it tasted great on toast (and even just with a spoon. lol)
