I hope you all have had a wonderful Memorial Weekend! We always spend this weekend outside; gardening and getting everything ready for another fabulous growing season. Saturday was a bust (as I mentioned yesterday) but Sunday was fabulous. (If you don’t count the sunburn I received.)
We got all my new plants in the ground, planted a few annuals here and there, got all 16 hanging baskets filled, and ran to Home Depot multiple times. The only thing we didn’t get done was planting out vegetables but we will get that done throughout the week.
I am working today (my office has an odd holiday policy) so we “celebrated” the holiday over the weekend. I have had this Disney Parks Cookbook for awhile now and have almost every page marked as something I would like to make. Since we were going to be busy at the same time, I wanted to make something easy.
These Fresh Fruit Waffle Sandwiches that are served in Liberty Square in Magic Kingdom were perfect! Plus, they fit the Red, White, and Blue color scheme for the weekend too.
Everything came together in a snap and was super easy. It’s just waffles, Nutella spread, and cut up strawberries, bananas, and blueberries. Can’t get much easier than that!
I also want to thank all the fallen heroes that we remember on this day for your ultimate sacrifice. As the wife of a Marine, I truly understand and appreciate everything that you have done for our country.

From one Marine wife to another; oorah. (once a Marine, always a Marine, grin)—we are dragging our feet, we were suppose to go to the parade at 9:30, unfort. we just got up. We stayed up most of the night talking about the house/property we saw yesterday….those waffles look good, Jules. I hope your day goes fast at work.
I’ll bet your garden is looking super awesome, Jules 🙂 We’ve got some really hot weather coming this week so my plants should really start to flourish, too.
